Thanks for your kind appreciation, Vedya. I can't comment much on allulose yet, as there are too few studies about it. It is considered a novel food. While the FDA has given its nod to use it, other health organizations haven't (in the EU, for example). But there is probably no harm in experimenting with it. The amount that you use to sweeten a coffee is probably within safe limits.
